  • 1 cup lite coconut milk
  • ½ cup cooked rice
  • Salt, to taste

Instructions:

    • In a blender, combine the roasted red pepper, roasted butternut squash, roasted onion, fresh rosemary, and lite coconut milk.
    • Blend the ingredients until smooth and creamy.
    • Pour into a pot and bring to a soft simmer
