PCOS-Friendly Yogurt and Fruit Parfait

This parfait recipe is a great source of protein and fiber, which can help regulate blood sugar levels and support hormone balance for those with PCOS. It's also low in sugar and high in healthy fats, making it a nutritious and satisfying breakfast or snack option.
- 1 cup plain Greek yogurt (low-fat or fat-free)
- 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- 1/4 cup chopped nuts (almonds, pecans, or walnuts)
- 1/2 cup chopped mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup chopped peaches or apricots
- 1 tablespoon chia seeds
- 1 scoop Inositol Plus (optional)
In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until smooth.
In a separate bowl, mix together the chopped nuts, mixed berries, and chopped peaches or apricots.
In a parfait glass or jar, layer the yogurt mixture, then the fruit mixture, and sprinkle a few chia seeds on top.
Repeat the layering until you reach the top of the glass or jar.
Serve chilled and enjoy!
